i only sifted once and i used libby's pumpkin instead of fresh. they came out delicious. my husband (who doesn't like my baking, especially my cookies) said, "these are quite possibly the best cookies you have ever made. just throw on some whipped cream and i think these would be better than a pumpkin pie." try some. they're really good.
